Ingredients
- 3 cups shredded hash browns, thawed.
- 1/2 cup butter, melted.
- 1/4 cup onion, finely chopped.
- 8 slices cooked bacon, crumbled.
- 1/4 cup cherry tomatoes.
- 8 eggs.
- 1/2 cup milk.
- 1 1/2 cup cheddar cheese, shredded.
- 1/2 cup coriander, chopped.
- fresh basil.
- salt and pepper.
- Preheat oven to 425 degrees F (220 degrees C).
- Mix hash browns, salt, pepper, olive oil and 1 cup Cheddar cheese in a mixing bowl.
- Grease desired muffin cups. Divide mixture between prepared muffin cups and use your fingers to pack them tightly and shape them into nests.
- Place in the preheated oven until the nests are nicely browned on the edges and cheese has melted, 15 to 20 minutes. Remove hash brown nests.
- Whisk the eggs and milk together until thoroughly combined; season with salt and black pepper.
- Pour equal amount of egg mixture into each nest; sprinkle with onion, tomatoes, bacon, basil & Coriander and remaining cheddar cheese.
- Bake at 350 degrees F until the eggs are set, about 10 to 12 minutes.
- Let it cool, gently slide a knife along the edges and use a fork to lift it out of the pan.
- Serve immediately.
- You can also experiment with ham, sausage, and veggies to make them your own.
